Charmoula couscous

Ingredients

  • 1/2 cup (120 milliliters) pistachios, shelled
  • 2 1/4 cups (530 milliliters) water or broth
  • 1/2 teaspoon (2 milliliters) salt
  • 2 cups (480 milliliters) couscous
  • 1 tablespoon (15 milliliters) olive oil
  • 1/2 red onion, sliced thin
  • 2 tablespoons (15 milliliters) charmoula (see recipe)
  • Fresh mint leaves, for topping

Directions

  1. Add water to a pot and bring to a boil. Stir in couscous, and take pot off heat.
  2. Cover pot and let stand five minutes while water is absorbed.
  3. Use a fork to fluff couscous.
  4. Transfer couscous to a bowl.
  5. Add olive oil, red onion, and pistachios and stir in.
  6. Drizzle with charmoula and top with mint leaves.
  7. Enjoy!
