Candied nuts

Ingredients

  • 1 1/2 cups (350 milliliters) sugar
  • 1/2 teaspoon (2.5 milliliters) cayenne
  • 1/2 teaspoon (2.5 milliliters) cinnamon
  • 1/4 teaspoon (1.25 milliliters) salt
  • 3/4 cups (180 milliliters) water
  • 4 cups mixed nuts

Directions

  1. Line a baking sheet with parchment paper and set aside.
  2. Place a medium saucepan over medium heat, then add the sugar, cayenne, cinnamon, salt, and water.
  3. Cook for five minutes, stirring occasionally, until the mixture starts to bubble and foam.
  4. Once mixture reaches 230 F (108 C), pour over the nuts and mix, then spread out on the lined baking sheet, separating the nuts as much as possible.
  5. Put the mixture in 350 F (175 C) oven for five minutes, once the nut mixture has started to crystalize remove from the oven and shake up the mixture that is on the pan to separate any nuts that may have adhered to each other.
  6. Wait twenty minutes for the nuts to cool, then transfer to a serving dish.
