Bottom-of-the-jar fresh salad and dressing

Delicious side salad from pantry leftovers.

Ingredients

For the salad:

  • 1 head romaine lettuce (washed)
  • 1/2 bag radishes, thinly sliced
  • 1 English cucumber, thinly sliced
  • 1 avocado, diced

For the dressing:

  • 1/4 cup pickle juice (from jar of Gherkins)
  • 1/8 cup extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • Salt and black pepper to taste

Directions

  1. In a large glass bowl, combine all ingredients for dressing, whisking together vigorously. Set aside once combined.
  2. Cut romaine lettuce into bite-size pieces, and thinly slice cucumber and radishes.
  3. Cut, peel, and dice avocado.
  4. Add all salad ingredients to large bowl with dressing already in it. Toss well to coat salad,
  5. Enjoy!
