Blueberry smoothie bowl

Ingredients

  • 3 cups (710 milliliters) blueberries (fresh or frozen)
  • 1 avocado
  • 1-1/2 cups (350 milliliters) coconut milk beverage (or other milk substitute)
  • 1/2 cup (120 milliliters) plain yogurt
  • 4 Medjool dates, pitted
  • 3 tablespoons (45 milliliters) honey
  • 2 tablespoons (30 milliliters) chia seeds
  • Juice of 1 lemon
  • Crushed ice (optional)

Toppings:

  • Fresh blueberries
  • Sliced bananas
  • Sliced kiwis
  • Cacao nibs

Directions

  1. Place blueberries, avocado, coconut milk beverage, yogurt, dates, honey, chia seeds, and lemon juice in a blender and pulse on high until smooth.
  2. Pour into a bowl, then artfully arrange as many toppings as you wish on top.
