Black bean and mango salad

  • 2-440 milliliter cans black beans, drained and rinsed
  • 2 mangoes, diced
  • 1 avocado, diced
  • 1 red bell pepper, diced
  • 1/2 red onion, finely diced
  • 1/2 jalapeño, seeded and minced
  • 2 limes, juice
  • 1/4 cup chopped fresh cilantro


  1. In a large bowl, mix together the black beans, mangoes, avocado, bell pepper, red onion, jalapeño, and lime juice.
  2. Serve immediately topped with the fresh cilantro.
