  • 1 ½ cups quartered strawberries
  • 2–3 tablespoons balsamic vinegar
  • 2 tablespoons honey
  • 1/8 teaspoon kosher salt
  • 1/8 teaspoon freshly cracked black pepper
  • One 300g wheel of Brie
  • 3 tablespoons finely chopped basil
  • ¼ cup finely chopped pecans
  • Sliced fresh or toasted baguette, for serving

  1. Preheat your oven to 375ºF and line an 8-inch square baking pan with parchment paper.
  2. In a medium bowl, gently mix the strawberries, balsamic vinegar, honey, salt, and pepper together then set aside while you bake your Brie.
  3. Place the Brie onto the prepared baking pan and bake in the preheated oven for 15 to 20 minutes. Remove the brie from the oven and transfer the brie along with the parchment paper to a rimmed serving dish and allow it to sit for five to 10 minutes to cool slightly.
  4. Meanwhile, stir the basil and pecans into the strawberry mixture then, when the Brie has cooled slightly, spoon the berries over top. Serve with sliced fresh or toasted baguettes.
