Asparagus fries with honey dill sauce

This is a nice recipe to take a break from the really heavy, unhealthy French fry. I love it because it’s super crispy and crunchy, inventive and a nice way to accompany any meal or have as a late afternoon snack. It’s really important to showcase asparagus this time of year and not hide it in a recipe. This dish is a great representation of that. 

Ingredients

  • 2 bunch asparagus, bottoms removed
  • 3 eggs, beaten
  • 1/4 cup water
  • 2 cups flour (any kind)
  • 2 cups bread crumbs
  • 1/2 cup Parmesan grated
  • 1 tablespoon dry dill
  • Salt
  • Pepper
  • 1 cup mayo
  • 2 tablespoons honey
  • 1/2 bunch dill, chopped
  • 1 tablespoon white vinegar

Directions

  1. In three separate bowls, have one bowl of breadcrumbs with the Parmesan mixed in, one bowl with beaten eggs and water and one with flour and dried dill and set aside.
  2. Set oven to 375 degrees.
  3. Take asparagus and dip into flour, then egg, then bread crumbs and then place on an oil baking sheet.
  4. Bake in the oven for 15 minutes or until golden brown and crunchy.
  5. While they are baking, in a bowl mix together mayo, fresh dill, honey, vinegar and salt pepper.
  6. Serve hot and with the honey dill dip!
