3-ingredient strawberry 'cheesecake'

These 'cheesecake' bites are a healthy alternative to the real thing. 


Total Time


  • 1 pint of local or organic strawberries
  • Fresh soft goat cheese (1/2 to 1 teaspoon per strawberry)
  • 2-3 gluten-free graham crackers


  1. Wash strawberries and remove tops and slice off bottom (so they stand up).
  2. Carefully take a knife and carve out a hole in the middle of each strawberry.
  3. Add goat cheese to each hole.
  4. Add graham crackers to a small baggy, seal and squish to crumble.
  5. Sprinkle crumbled graham crackers on goat cheese.
  6. Eat right away or chill in the fridge for an easy grab and go!
